Brown Rice Salad

 Here is the recipe for the Brown Rice Salad that I made and took to the Fourth of July party a few days ago.  It’s easy and rather healthy!  It’s best in the summertime with fresh tomatoes and fresh dill when you can get it.  In the winter time cherry tomatoes work best and dried dill works just fine.

Brown Rice Salad

Brown Rice (2 cups dried prepared with 5 cups of water according to package directions)

1/2 cup olive oil

1/2 cup Balsamic Vinegar

2 tomatoes, chopped

1 bunch green onions, chopped

1/4 cup chopped fresh dill or according to taste

1/2 tsp salt

1/4 tsp pepper

Prepare the brown rice and set aside to cool.  Add the chopped tomatoes and  chopped green onions and mix well.  Mix in the dill, salt, and pepper.  Add the olive oil.  Add the Balsamic Vinegar and mix well.  Add salt and pepper.
